

I've been Vegan for 25 days! Woohoo.. I know it doesn't seem like much but I'm a huge (or used to be huge) Carnivore and have a massive infatuation with steak. However I decided for Lent to to go Vegan for 6 weeks and see how my body adjusted to the new lifestyle. So far I must say that I am thoroughly enjoying it so far and have considered making a few adjustments when I transition back into my "normal life".
Don't be fooled it isn't super simple to be a vegan, but it isn't as hard as most people make it out to be. It also isn't as expensive as people say it is either (I'm a teacher I don't do expensive ever!!). What I will say is being a Vegan is a bit time consuming. My meal planning for the week takes a bit more time (this week's meal planning took me 3 hours!). Also I cant be as impetuous when deciding what to eat whether I'm at home, or out at a restaurant it takes a bit more thinking and creativity. 
Besides that my body feels the same (not great but not sluggish). I was expecting a huge difference in weight, skin appearance, and energy levels. Since it's only been three weeks I guess I can't really expect miracles. Eating healthier/cleaner is still at the forefront even as a Vegan (yes you can be an unhealthy vegan). So I try to make sure that my vegan substitutes (if I'm not eating a meal I've prepared myself) are low in sodium, sugar and soy free. So when I stumbled onto this Vegan Gluten Free Waffle Recipe on Pinterest. This recipe made me fall in love with Vegan options for comfort foods I love, and introduced me to Minimalist Baker whose recipes are the only ones I can recreate and be satisfied with.
In this recipe I took her original and adapted it to what I had in the house and flavors I really liked. That is what is so awesome about her recipes they are adaptable to your needs/wants. I kept the basics of the recipe and added my own swag to it! Here's what you'll need:
