I recently made the switch to a Vegan lifestyle, and in doing so I've spent a lot more time in the kitchen. I'm on week 6 (43 days in) and I find myself falling in love with soups (probably because they are the easiest and least time consuming meal to make). I used to think soup was only a go to meal when you were sick, and of course I'd run to the chicken noodle soup can in a hurry. Now fast forward to my adult Vegan life and I started really liking Lentil soup (I'll share my personal recipe on that later). But after 4 weeks, I was getting tired of the lentils and wanted to see what else I could dabble in within the world of Vegan soups. That's when Pinterest came in handy of course (I have an immense love affair with Pinterest), and landed me in Vegan soup heaven. Everything I saw on my feed looked delicious, until I clicked the link and they required Master chef cooking techniques and kitchen gadgets I was not going to purchase.
So I started looking for soup options that required minimal work, minimal ingredients or consisted of ingredients I already had in my home. That's what people fear the most when looking into becoming vegan... how much will it cost me. I'm not going to lie, being a vegan has cost me a bit more than when I was a carnivore, and has been a bit frustrating when a meal fails. However, a lot of the things I started making/loving didn't require much money or too many ingredients. It's best to stick to simple when being a vegan, if you want to save some dinero. Don't go for fancy, go for what tastes good and what you can afford. This is why I decided to compile a list of the 5 best simple vegan soups that don't require too many ingredients or are already in your kitchen right now. Plus these soups are all delicious ! Don't be startled/alarmed by the number of ingredients (I've listed them for you next to the title/recipe they originate from) as most of the ingredients in these are different types of seasoning. I didn't have any seasoning in my house besides salt, pepper and some random meat seasoning. So buying various seasonings cost me a bit... now that I have them let the fun begin!
